VEGAN SUPER BOWL RECIPES:
NACHO CHEESE & CAULIFLOWER WINGS
Are you ready for some football?!
You better be because Super bowl LI is around the corner! Even though the Dallas Cowboys are not playing, I am still excited to watch Super Bowl LI because I get to eat delicious food!
Over a billion dollars is spent on food for the Super Bowl – Woah! – and most of the food is unhealthy for you. Don’t worry though, I have TWO Super Bowl recipes that will win over your taste buds. The recipes for Cauliflower Wings and Nacho Cheese Sauce are vegan a.k.a. harmless. Woo hoo! * All the recipes are from Hot for Food!*
Nacho Cheese
Ingredients:
1 cup peeled, cubed, cooked white potato (or use cauliflower if you are paleo)
1/2 cup peeled, cubed, cooked carrot
1/4 cup sunflower oil (or any other vegetable oil)
1/4 cup non-dairy milk (can substitute water)
2 tsp lemon juice
6 pickled jalapeño slices
3 tbsp jalapeño pickling liquid
1 tbsp tomato paste
1 1/2 tsp arrowroot flour/starch
1 tsp garlic powder
1 tsp onion powder
1 tbsp nutritional yeast
1/2 tsp sea salt
How to make:

Peel and cube potatoes and carrots.

Add vegetables to a pot of water and boil for 10 min.

Drain and add to blender. Blend until smooth then add remaining ingredients and blend again.

You can serve immediately, heat it up or freeze for later.

You can roast broccoli, or any other veggie, and pour the cheese sauce over it. I dipped paleo/vegan friendly chips into my sauce!
Cauliflower Wings
Ingredients:
1 head of cauliflower (approx. 4-5 cups of florets)
1/2 cup unsweetened non-dairy milk (almond or soy work best)
1/2 cup water
3/4 cup all-purpose flour (can substitute gluten-free rice flour)
2 tsp garlic powder
2 tsp onion powder
1 tsp cumin
1 tsp of paprika
1/4 tsp sea salt
1/4 tsp ground pepper
Buffalo Sauce
1 tbsp earth balance buttery spread (optional)
1 cup Red Hot Sauce (can use Frank’s or any other hot sauce that is vegan/organic)
BBQ Sauce
1 cup Annie’s Organic BBQ Sauce
How to make:

Line your baking sheet with parchment paper and preheat your oven to 450 F. *Note: Hot For Food says to use parchment paper so that the batter doesn’t stick. I made the mistake of using foil. Half of my batter came off and stuck to the foil!

Wash and cut cauliflower.

Mix batter ingredients together. Batter should be thick.

Coat each floret evenly in the mixture and place on your baking sheet neatly.

Bake for 25 mins, until golden. Make sure you flip the florets hallway through.

While the cauliflower is baking, pour your Buffalo and/or BBQ sauce in a bowl separately. We will toss the cauliflower in the bowl.

When the cauliflower is golden, remove from the oven and coat the “wings” in your sauce. Use the bowl to toss the florets.

Place the coated florets back onto the baking sheet and bake for another 25 minutes. Be sure to flip them halfway through.
