Breakfast is our favorite meal of the day and tacos are our favorite dish. So it’s only natural that I teach you how to make vegan breakfast tacos. This recipe is so easy you guys! It’s perfect for those who don’t want to spend all day in the kitchen.
You can easily add ingredients like veggie sausage or vegan cheese to these tacos. That would take the flavors up a notch!

HOW TO MAKE VEGAN BREAKFAST TACOS
Main Ingredients:
2 yellow potatoes
1/4 tsp old bay seasoning
1/4 tsp garlic salt
1/4 tsp sweet onion and herb seasoning
6 tortillas
Tofu Scramble Ingredients:
1/4 tsp old bay seasoning
1/4 tsp garlic salt
Water/almond milk (as needed)
Instructions:

Dice potatoes into bite-size pieces. You want them to be small! They cook faster.

Preheat oven to 375. Coat baking dish with light oil. Add potatoes bake until brown and crispy. Then add smoked paprika, old bay, garlic salt and sweet onion and herb seasoning.

In a hot pan, add oil and cook onion and red bell pepper until they are cooked through and brown.

To make a simple tofu scramble, rinse and drain high protein tofu. Pat dry to absorb excess moisture. Chop tofu into bite-size pieces.

In the same pan used to cook onion and peppers, add oil and tofu into the pan. Heat the tofu for 2-3 minutes.

Next add smoked paprika, old bay, garlic salt, turmeric, nutritional yeast and sweet onion and herb seasoning. Optional: You can add shallot too!

Cook and mix together for 4 minutes. Note: If you need more liquid, feel free to add water or almond milk to your scramble.

To assemble the tacos, place potatoes, onion, red bell pepper and tofu scramble in the tortilla. Optional: You can add avocado, spinach, veggie sausage and/or vegan cheese!

You can take these suckers to go! Wrap in foil, parchment paper, etc.
